These are made for a relaxed supper with plenty of napkins and a bowl of crunchy salad.

Ingredients

Chicken

  • 1 kg chicken wings, joints separated

Glaze

  • 2 tbsp fish sauce
  • 2 tbsp honey
  • 1 tbsp neutral oil
  • 2 garlic cloves, grated
  • 15 g ginger, grated
  • 1 red chilli, finely chopped

To finish

  • 2 limes, cut into wedges
  • 15 g coriander, chopped

Preparation

  1. Heat the oven to 220°C / 200°C fan. Line a large roasting tray with baking parchment.
  2. Pat the wings dry with kitchen paper. Mix all the glaze ingredients in a large bowl, then turn the wings in it until coated.
  3. Spread in a single layer. Roast for 40-45 minutes, turning after 25 minutes, until browned and the thickest part reaches 75°C. If the glaze darkens early, cover loosely with foil.
  4. Scatter with coriander and squeeze over lime at the table.

Ingredients

Meatballs

  • 500 g beef mince
  • 50 g fresh breadcrumbs
  • 1 egg, beaten
  • 1/2 tsp fine salt
  • 1 tsp dried oregano
  • 2 garlic cloves, crushed

Sauce

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 400 g chopped tinned tomatoes
  • 150 ml water

To finish

  • 15 g basil, torn

Preparation

  1. Mix all the meatball ingredients gently in a bowl. With damp hands, form 20 evenly sized balls.
  2. Heat the oil in a wide pan. Brown the meatballs for 6-8 minutes, turning carefully, then lift onto a plate.
  3. Soften the onion in the same pan for 5 minutes. Add tomatoes and water, stir well and return the meatballs.
  4. Cover and simmer for 18-20 minutes, turning once, until the centre of the meatballs reaches 75°C. Add the finishing ingredients just before serving.

Batter

  • 250 g plain flour
  • 2 tsp baking powder
  • 125 g caster sugar
  • 1/4 tsp fine salt
  • 2 eggs
  • 150 g plain yoghurt
  • 100 ml neutral oil
  • 75 ml milk
  • 1 tsp vanilla extract

Flavour

  • 150 g blueberries
  • 1 lemon, finely grated zest

Preparation

  1. Heat the oven to 190°C / 170°C fan. Line a 12-hole muffin tin with paper cases.
  2. Whisk the flour, baking powder, sugar and salt in a bowl. In another bowl, whisk the eggs, yoghurt, oil, milk and vanilla.
  3. Pour the wet mixture into the dry ingredients. Fold just until no dry flour remains, then gently fold in all the flavour ingredients.
  4. Divide between the cases and bake for 20-23 minutes until risen and a skewer comes out without wet batter. Cool in the tin for 5 minutes, then transfer to a rack.

  4. Spoon over the dressing just before serving and turn gently once.
